Paul Onishi, a certified vegan chef/instructor, was among the chef presenters at the recent VegFest Oahu. His demo dish was “Healthy Loco Moco.” In 2017, urgent health needs brought on by his former diet spurred him to enroll the ‘Ekahi Ornish Reversal program with excellent results. He now applies his culinary skills to plant-based cuisine and has become a sought-after educator in vegan cooking.
Paul will tell us his story and demo tips and products for reducing animal products in our diets without sacrificing flavor.

About Our Speaker
Chef Paul Onishi has worked in the highly competitive food and beverage industry for 35 years. He has also been teaching for the Hawai’i Department of Education for 10 years. He helped start a culinary training program for at-risk youth in elementary through high school on O’ahu and Hawai’i Island. Paul also brings his unique and engaging style of hands-on culinary instruction to the Windward Community College campus. Paul has evolved from being an avid consumer of animal protein to an “enlightened” vegan chef and educator after a recent health scare.
